Confession time: I actually do exemplify at least one singles stereotype - I eat a lot of pizza. I eat pizza probably at least once a week, if not more. This is because I make my own. It's so EASY! And the variety is endless. Here are some basics:
- Start with some homemade or store-bought dough (Toni Lydecker has a great & simple single-serving pizza dough recipe in her book).
- The dough takes awhile (approximately an hour and a half) to rise, so put it in a bowl coated with olive oil, cover with a towel or plastic wrap, and go do some chores, take a shower, or whatever else is on your agenda for the day/evening.
- Once the dough has risen to about double its size, stretch it into the shape/size/thickness you want and coat with olive oil (I usually just use the olive oil from the bowl).
- If you like sauce, spread a little on - I've recently found, however, that sauce often doesn't make that much of a difference. I've had great pizza both with and without sauce.
- This is the fun, creative part - there are no rules to what you can put on your pizza. My personal favorite is spinach (cooked with garlic), feta, and tomato with basil. Basil makes cooked tomatoes delicious. Oh, and I found out the hard way that fresh spinach must be sautéd for a short time or it just dries out. But, really, any combination of ingredients is acceptable - just see what tastes good to you! Other toppings I like (not necessarily together) include eggplant, broccoli, olives, pineapple, and barbecue chicken.
- Bake at 400 to 425 degrees for about 15 minutes.
